Bistro Club Sandwich
Ingredients
⦁ 3 tablespoon regular or light mayonnaise
⦁ 1 garlic clove, minced
⦁ 1 baguette
⦁ 130-g log creamy goat cheese
⦁ 1 pinch salt and pepper
⦁ 4 cups sliced cooked chicken
⦁ 2 tomatoes
⦁ 1/4 cup shredded fresh basil
Instructions
⦁ In a little bowl, mix mayonnaise with garlic. Cut skin from whole chicken and separate meat from bones. Tear or cut the chicken into bite-size portions. Slice tomatoes. Shred basil. Slice baguette crosswise into 4 pieces, then slices each in half horizontally. Put pieces cut side up on a counter.
⦁ Coated with the garlic-mayo mixture. Crumble half the goat cheese covering the bottom halves and squash into bread. Top with chicken. Sprinkle with salt and pepper. Cover with tomatoes. Crumble on the rest of the goat cheese. Sprinkle with basil. Add top halves. Excellent with a cold beer.
